Our Valentine's Day dinner was a heart-shaped version of my whole wheat pizza. It's super easy (my favorite way to cook) and the success is in the cooking technique, as the recipe is foolproof. In a medium mixing bowl, combine 1 cup whole wheat flour, 1 cup all-purpose flour, 1 packet yeast, 1T olive oil and 3/4 cup warm water. Knead on a floured surface and let rise in a bowl covered with a dish cloth for 45 minutes to 1 hour.
Preheat your oven to 475 with a baking sheet or pizza stone inside. This is crucial for a crisp crust that isn't all soggy in the middle. Stretch out the dough and make your pizza on a sheet of parchment paper on top of an upside down cookie sheet for easy transfer. Top your pizza(s) any way you like; tonight we had spinach and feta (top) and pepper (bottom). Open the oven and pull out the rack far enough to slide your parchment paper onto the heated baking sheet without burning yourself. Don't get cocky. Bake for 7-12 minutes, until all bubbly and golden and it smells so good and you are willing to risk burning your tongue you just can't wait another minute. This recipe feeds our foursome with almost no chance for leftovers. You can double it, just don't double the yeast.
